Vegetable Kebab

One of the most favorite and versatile starter. This one is a hit and a huge favorite alongside the likes of cutlets in parties.
An array of vegetables are used to make this. And these days even the shallow fried ones give tough competition to the fried ones. Easy to make with handy ingredients and veggies of your choice this one is sure to remain in the favorites list.


  • Ingredients:
    1. Potatoes: 2 mashed
  • 2. Mix Veggies: Cauliflower, Beans, Carrots, Peas,mushrooms, corns (anything or everything of your choice)
  • 3. Paneer: 1/2 cup
  • 4. Coriander Powder: 1 tsp
  • 5. Green chilies: 2 finely chopped
  • 6. Coriander leaves: a handful
  • 7. Garam Masala: 1 tsp
  • 8. Lemon juice: juice of half a lemon
  • 9. Corn Flour: 1 tbsp
  • 10. Salt to taste
  • 11. Oil to shallow fry


1.Boil the potatoes. Cool, peel and mash with hands or masher.
2.Roughly chop. steam the veggies and mash roughly. Not as smooth as potatoes.
3.To the mashed potatoes ,add the veggies and the spices, salt ,paneer (oops forgot to mention mash/grate the paneer and add) , coriander leaves, green chilies, garam masala, lemon juice and the corn flour . Adjust the cornflour as required.
4.Mix them well and make a smooth dough.
5.Shape them as desired. I used a toothpick and rolled ovally with only little space to hold. Alternatively you can shape them round and make too.
6.Heat a pan, add oil, place 2-3 kebabs at a time and shallow fry on a medium or low flame .Keep turning them for even cooking.
7.Serve hot with chutney or ketchup.

Alternatively you can fry them .
