Bhindi Fried Rice

This is an eternal favorite of my son. He loves bhindi, when mixed with rice. Works get with left over rice and tastes great too. A novel way of adding these unusual veggies to rice. One pot easy lunch ideas are the demand for times. Making kids eat vegetables have been a challenging tasks for moms.

Bhindi Fried Rice

Ingredients

Rice: 1 cup cooked and cooled (yesterdays would also work great)

Bhindi: 4-5 chopped in roundels.

Onions: 1 thinly sliced

Pav Bhaji Masala: 1 tsp

Cashews broken: a few (optional)

Salt as per taste

Turmeric powder: a pinch

Red Chili powder: 1 tsp

Method:

  1. Heat oil in a pan add the sliced onions, cashews and sauté till it gets golden brown.
  2. Add the powders and salt and fry the bhindi nicely. Add the rice and lemon juice and mix.

Serve hot with onion raita/ boondi raita or with chips.
