Carrot Rice

Everyday thinking of what to make for lunch is a big task for moms. I go blank every morning what to make for breakfast and lunch for kiddo.Roti sabzi he won’t finish the sabzi and they get bored easily eating the same. So i try to balance by making variety rice’s as an alternative. One of them is Carrot Rice. Carrot rice is an easy to make one pot lunch. Healthy, easy to cook and nutritious. Always comes handy for moms who have fussy eating kids.

Ingredients:

Rice: 1 cup cooked and cooled (yesterdays would also work great)

Carrot Grated: ½ cup

Bay leaf: 1

Onions: 1 thinly sliced

Pav Bhaji Masala: 1 tsp

Cashews broken: a few (optional)

Salt as per taste

Turmeric powder: a pinch

Green chillies: 1 finely/roughly chopped

Juice of half a lemon

 

Method:

Slice the onions, chillies. Grate the carrots. Heat a oil in a pan add the bayleaf, sliced onions, cashews and sauté till it gets golden brown. Add the powders and salt and cook till the carrot is sauted nicely. Add the rice and lemon juice and mix.

 

Serve hot with onion raita/ boondi raita or with chips.
