Today i am sharing the recipe of easy Veg Pulav. Easy to make, requires minimal ingredients. Can be made even in a hurry. Since it is very mildly flavored and include veggies great for kids too.
Ingredients: (serves 2)
Basmati Rice (see notes): 1/2 cup
Carrot: 1 diced
Beans: 4-5 cut (optional)
Green Peas: A Fistful
Onion : 1 sliced
Cashews : 2-3 (optional)
Any other veggies of your choice.
Oil+ Ghee : 1tbsp
Salt to taste
Pepper powder: 1 pinch
Garam Masala : a pinch (optional)
Chop the veggies. Soak the rice in warm water for minimum 10 minutes.
Pressure cook for 3 whistles with 1 cup of water. Allow the rice to cool.
Heat oil+ghee in a pan add the cashews, saute till golden brown.
Add the onions and fry till golden brown.
Add carrots, green peas and saute in low flame. Keep the lid closed and let it cook till al dent. Add a spoonful water if needed (If adding other veggies, add at this stage).Add the masala if adding.
Add the rice and salt and mix gently.
Serve hot with Raita or any sabzi of your choice.
You can use any normal rice too. The trick is to cook the rice with less water so that the grains separate.
You can also add (khada masala) like bayleaf, cloves, pepper. If adding then skip adding garam masala.
